Description

Unstuffed Cabbage Roll Soup is a comforting and hearty dish that captures the flavors of traditional cabbage rolls without the hassle of stuffing. This soup combines ground beef and pork with savory tomato sauce, tender cabbage, and rice, all simmered to perfection in a rich beef broth. Perfect for a cozy family meal, it’s easy to prepare and packed with satisfying flavors.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • ½ yellow onion, chopped (about ½ cup)
  • 3 cloves garlic, minced
  • ½ pound ground beef
  • ½ pound ground pork
  • 2 carrots, diced
  • 1 (14.5-ounce) can tomato sauce
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 2 (14.5-ounce) cans beef broth
  • ½ cup uncooked white rice
  • ½ small head green cabbage, chopped (about 4 cups)
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • Fresh parsley, for garnish

Instructions

  1. Sauté Vegetables: Heat olive oil over medium heat in a Dutch oven. Add the chopped onion and sauté for 4-5 minutes until translucent. Add minced garlic and cook for an additional 30 seconds, stirring constantly to avoid burning.
  2. Cook Meat: Add the ground beef and ground pork to the pot. Cook until browned, breaking the meat apart with a spoon as it cooks to ensure even browning and proper texture.
  3. Add Ingredients: Stir in the diced carrots, tomato sauce, drained diced tomatoes, beef broth, uncooked rice, chopped cabbage, bay leaf, Worcestershire sauce, and paprika. Mix all ingredients thoroughly to combine.
  4. Simmer: Bring the mixture to a boil. Then reduce the heat to a simmer and cook uncovered for 25 minutes, or until the rice is cooked through and the cabbage is tender, stirring occasionally.
  5. Serve: Remove the bay leaf from the soup. Ladle the hot soup into bowls and garnish with fresh parsley if desired. Serve immediately and enjoy your hearty meal.

Notes

  • For a thicker soup, cook a few minutes longer to reduce excess liquid.
  • Use lean ground meats to reduce fat content.
  • Substitute brown rice if preferred, but increase cooking time accordingly.
  • Fresh parsley adds a nice fresh finish but can be omitted.
  • Leftovers store well in the refrigerator for up to 3 days and freeze beautifully.
