Ingredients

Scale

Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil

Turkey Taco Filling

  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup corn, fresh or frozen

Toppings

  • 1/2 cup shredded cheddar cheese
  • Chopped cilantro
  • Diced avocado
  • Sour cream (optional)

Instructions

  1. Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork and place them on a foil-lined baking sheet. Bake for 45 to 50 minutes until they are tender when pierced with a fork.
  2. Prepare Turkey Filling: While the sweet potatoes bake, heat the olive oil in a skillet over medium heat. Add diced onion and cook for about 3 minutes until soft. Stir in minced garlic and cook for an additional 30 seconds.
  3. Cook Ground Turkey: Add the ground turkey to the skillet, cooking it until browned and breaking it apart with a spoon as it cooks. Mix in taco seasoning, cumin, chili powder, salt, and water. Let it simmer for 3 to 4 minutes to combine flavors.
  4. Add Beans and Corn: Stir in the rinsed black beans and corn, then remove the skillet from heat to keep the mixture warm.
  5. Stuff Sweet Potatoes: When the sweet potatoes are tender, let them cool slightly. Slice each potato open lengthwise and gently fluff the inside with a fork. Spoon the turkey taco mixture evenly into each potato.
  6. Melt Cheese: Top each stuffed sweet potato with shredded cheddar cheese and return them to the oven for 5 minutes or until the cheese is melted and bubbly.
  7. Serve: Remove from the oven and garnish with chopped cilantro, diced avocado, and sour cream if desired. Serve hot and enjoy!
