- 4 cups baby spinach (approx. 2 handfuls)

- Preheat the Oven: Preheat your oven to 425°F (215°C) to ensure it reaches the right temperature for baking the potatoes thoroughly.
- Prepare and Bake Potatoes: Poke holes around each russet potato with a fork to allow steam to escape. Wrap each potato in tin foil and place them in the oven. Bake for 40 to 50 minutes, or until the potatoes are tender when pierced with a fork.
- Cook the Mushroom Filling: While the potatoes bake, heat the coconut oil in a skillet over medium heat. Add the finely chopped garlic, cremini mushrooms, and a pinch of salt. Sauté for 5 to 10 minutes until the mushrooms soften and begin to brown.
- Add Flavorings and Spinach: In a small bowl, mix the almond butter, balsamic vinegar, and lemon juice until well combined. Pour this mixture into the skillet with mushrooms and cook together until the mushrooms are fully browned. Finally, add baby spinach and continue cooking until wilted and tender.
