Scale
Main Ingredients
- 1 pound Velveeta cheese, cut into cubes
- 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
Optional Ingredients
- 1/2 pound ground beef or sausage, cooked and drained
- 1/2 teaspoon chili powder (optional for extra heat)
- Tortilla chips for serving
Instructions
- Cook the Meat (Optional): In a large skillet, cook the ground beef or sausage over medium heat until fully browned. Drain the excess grease and set the meat aside.
- Melt the Cheese and Tomatoes: In a medium saucepan or slow cooker, combine the cubed Velveeta cheese and the undrained can of Rotel diced tomatoes with green chilies. Heat over low, stirring frequently, until the cheese has fully melted and the mixture is smooth.
- Combine and Heat: Stir in the cooked meat and chili powder, if using. Continue heating the dip until everything is hot and well combined.
- Serve Warm: Transfer the dip to a serving dish or keep it warm in a slow cooker set to ‘keep warm.’ Serve with tortilla chips for dipping.
Notes
- This dip can be made vegetarian by omitting the meat.
- For a creamier version, stir in 1/4 cup of milk or cream while melting the cheese.
- Enhance texture and flavor by adding black beans or corn.
- Keep the dip warm throughout your event by using a slow cooker on the ‘keep warm’ setting.
