Instructions
- Make the Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until fully incorporated. - Roll and Fill: Divide the dough in half and roll each portion out between two sheets of parchment paper into a 1/4-inch thick rectangle. Brush the melted butter over the dough, then sprinkle evenly with brown sugar and cinnamon.
- Form the Logs: Carefully roll up the dough tightly into a log, starting from the long edge. Wrap tightly in plastic wrap and refrigerate for at least 1 hour to chill and set.
- Preheat Oven: Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
- Slice Cookies: Remove chilled dough from fridge and slice into 1/4-inch thick rounds. Place the slices on prepared baking sheets, spacing about 2 inches apart to allow for spreading.
