Instructions

  1. Prep ingredients: Combine kosher salt, ground black pepper, onion powder, and garlic powder in a small bowl. Cut the baby potatoes into halves or 1-inch chunks. Cut the top sirloin steak into 1 1/2- to 2-inch chunks and pat dry thoroughly with paper towels to ensure better searing.
  2. Cook potatoes: Melt 1 tablespoon of the butter together with the olive oil in a large skillet over medium-high heat. Place the potatoes in a single layer in the skillet, flat side down. Sprinkle half of the seasoning mixture over the potatoes. Cook without stirring for 4-5 minutes to develop a golden crust.
