Scale
Main Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 6 large eggs
- 1/2 cup milk
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Topping & Garnish
- 1/2 cup breadcrumbs (optional, for topping)
- Fresh parsley or basil, for garnish (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil or a nonstick spray to prevent sticking during baking.
- Sauté Onion and Garlic: Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3 to 4 minutes until softened. Add minced garlic and cook for another 30 seconds until fragrant, careful not to burn.
- Cook Spinach: Add chopped fresh spinach to the skillet. Cook while stirring occasionally for 2 to 3 minutes until the spinach wilts. Remove from heat and allow the mixture to cool slightly.
- Mix Cheese and Eggs: In a large bowl, whisk together ricotta cheese, shredded mozzarella, grated Parmesan, eggs, milk, dried oregano, salt, black pepper, and red pepper flakes (if using). Combine well to create a smooth mixture.
- Combine Spinach Mixture: Add the cooled spinach mixture to the egg and cheese mixture. Stir gently but thoroughly to ensure even distribution.
- Assemble in Baking Dish: Pour the combined mixture into the prepared baking dish, spreading it evenly. If desired, sprinkle breadcrumbs over the top for a crunchy finish.
- Bake: Bake in the preheated oven for 30 to 35 minutes until the top turns golden brown and the center is set. Insert a toothpick in the center to check doneness; it should come out clean.
- Cool and Garnish: Remove the bake from the oven and let it cool for a few minutes to set. Garnish with fresh parsley or basil if desired for added flavor and visual appeal.
- Serve: Slice and serve warm as a delicious and satisfying brunch or breakfast option. Enjoy your homemade Spinach Ricotta Brunch Bake!
Notes
- Optional breadcrumbs add a nice crunchy texture but can be omitted for a gluten-free version if substituted with gluten-free breadcrumbs.
- Red pepper flakes are optional and can be adjusted based on your preference for heat.
- Fresh herbs like parsley or basil make a lovely fresh garnish but are not necessary.
- This bake reheats well and can be kept in the fridge for up to 3 days.
- For a lower-fat version, consider using part-skim ricotta and reduced-fat mozzarella.
