Ingredients
Scale
Ramen and Vegetables
- 1 (3-ounce) package instant ramen noodles (discard seasoning packet)
- 2 cups shredded green cabbage
- 2 cloves garlic, minced
- 1/2 teaspoon grated ginger
- 1 green onion, sliced
Sauce and Seasonings
- 1 tablespoon sesame oil or vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon gochujang or sriracha (adjust to taste)
- 1/2 teaspoon sugar
- 1 teaspoon sesame seeds (optional)
Dairy
- 1/2 cup shredded mozzarella or cheddar cheese
Other
- Water for boiling noodles
Instructions
- Cook the noodles: Bring a pot of water to a boil and cook the instant ramen noodles according to package instructions, omitting the seasoning packet. Drain and set aside.
- Sauté cabbage: Heat sesame or vegetable oil in a large skillet or wok over medium heat. Add the shredded cabbage and sauté for 3–4 minutes until it begins to wilt.
- Add aromatics: Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant and well combined.
- Combine noodles and sauce: Add the cooked noodles to the skillet along with the soy sauce, gochujang or sriracha, and sugar. Toss everything together thoroughly and heat through, allowing the flavors to meld.
- Melt the cheese: Sprinkle the shredded cheese evenly over the noodles, cover the pan with a lid, and let it sit for 1–2 minutes to allow the cheese to melt. Stir gently until the cheese is fully incorporated into the noodles.
- Garnish and serve: Transfer the ramen to a serving bowl and garnish with sliced green onions and optional sesame seeds. Serve hot for immediate enjoyment.
Notes
- Use kimchi instead of fresh cabbage for a tangy, fermented flavor twist.
- For a creamier dish, add a splash of milk or a spoonful of mayonnaise before melting the cheese.
- This recipe is easily doubled if you want to make two servings.
