Instructions

  1. Cook the noodles: Bring a pot of water to a boil and cook the instant ramen noodles according to package instructions, omitting the seasoning packet. Drain and set aside.
  2. Sauté cabbage: Heat sesame or vegetable oil in a large skillet or wok over medium heat. Add the shredded cabbage and sauté for 3–4 minutes until it begins to wilt.
  3. Add aromatics: Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant and well combined.
  4. Combine noodles and sauce: Add the cooked noodles to the skillet along with the soy sauce, gochujang or sriracha, and sugar. Toss everything together thoroughly and heat through, allowing the flavors to meld.
  5. Melt the cheese: Sprinkle the shredded cheese evenly over the noodles, cover the pan with a lid, and let it sit for 1–2 minutes to allow the cheese to melt. Stir gently until the cheese is fully incorporated into the noodles.
  6. Garnish and serve: Transfer the ramen to a serving bowl and garnish with sliced green onions and optional sesame seeds. Serve hot for immediate enjoyment.
