  • 2 large sweet onions, cut into 1/2-inch rings
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup buttermilk
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • Vegetable oil for frying


Instructions

  1. Prepare the Onion Rings: Peel and slice the onions into rings, separating them gently.
  2. Mix the Coating: In a medium bowl, whisk together the flour, baking powder, garlic powder, smoked paprika, salt, and black pepper.
  3. Prepare the Dredging Station: In a separate bowl, whisk the buttermilk and eggs until smooth. Place the panko breadcrumbs in another shallow bowl.
  4. Coat the Onion Rings: Dredge each onion ring in the flour mixture, then dip into the buttermilk mixture, and finally coat well with panko breadcrumbs.
  5. Let Them Rest: Place coated rings on a tray and let them rest for 10 minutes to set.
  6. Fry the Rings: Heat 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C). Fry the onion rings in batches for 2–3 minutes per side, or until golden brown and crispy.
