Description

This Snickerdoodle Banana Bread is a delightful twist on classic banana bread, with a cinnamon sugar topping that adds a sweet crunch to every bite. Moist and flavorful, this easy-to-make bread is perfect for breakfast or as a sweet treat any time of the day.

Ingredients

Scale

Wet Ingredients:

  • 3 ripe bananas (mashed)
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Additional:

  • 1/4 cup sour cream
  • 1/4 cup cinnamon sugar (for topping)

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, combine mashed bananas, melted butter, granulated sugar, brown sugar, eggs, and vanilla.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. Combine wet and dry ingredients: Gradually add dry ingredients to the wet mixture, then fold in sour cream until smooth.
  5. Bake: Pour batter into the prepared pan, sprinkle with cinnamon sugar, and bake for 55–65 minutes.
  6. Cool and serve: Let the bread cool in the pan, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use very ripe bananas for the best flavor and texture.
  • If you like a crisp topping, broil the loaf for 1–2 minutes at the end to caramelize the cinnamon sugar.
  • Bread can be wrapped and stored at room temperature for up to 3 days or frozen for longer storage.
