Main Ingredients:
- 1 medium head cauliflower (cut into small florets)
- 1/4 cup extra virgin olive oil
Dressing:
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 2 tablespoons capers (drained)
- 1/3 cup Kalamata olives (pitted and sliced)
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped celery
- 1/4 cup diced red onion
- 1/4 cup toasted pine nuts
- 1/4 cup sun-dried tomatoes (chopped)
- Salt and black pepper to taste
Instructions
- Blanch Cauliflower: Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 2–3 minutes until just tender but still crisp. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain again and pat dry.
- Prepare Dressing: In a large mixing bowl, combine the olive oil, red wine vinegar, lemon juice, salt, and pepper. Whisk until well combined.
- Combine Ingredients: Add the blanched cauliflower, capers, olives, parsley, celery, red onion, pine nuts, and sun-dried tomatoes. Toss until everything is evenly coated in the dressing.
- Chill: Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve: Serve chilled or at room temperature.
Notes
- For added flavor, stir in chopped anchovies or a pinch of crushed red pepper flakes.
- This salad can be made a day in advance and actually tastes better as it sits.
