Description

Sicilian Cauliflower Salad is a refreshing and delightful dish that combines blanched cauliflower with a zesty dressing and a variety of Mediterranean flavors. Perfect for a light and healthy side dish or a standalone salad.

Main Ingredients:

  • 1 medium head cauliflower (cut into small florets)
  • 1/4 cup extra virgin olive oil

Dressing:

  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons capers (drained)
  • 1/3 cup Kalamata olives (pitted and sliced)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped celery
  • 1/4 cup diced red onion
  • 1/4 cup toasted pine nuts
  • 1/4 cup sun-dried tomatoes (chopped)
  • Salt and black pepper to taste


Instructions

  1. Blanch Cauliflower: Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 2–3 minutes until just tender but still crisp. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain again and pat dry.
  2. Prepare Dressing: In a large mixing bowl, combine the olive oil, red wine vinegar, lemon juice, salt, and pepper. Whisk until well combined.
  3. Combine Ingredients: Add the blanched cauliflower, capers, olives, parsley, celery, red onion, pine nuts, and sun-dried tomatoes. Toss until everything is evenly coated in the dressing.
  4. Chill: Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  5. Serve: Serve chilled or at room temperature.

Notes

  • For added flavor, stir in chopped anchovies or a pinch of crushed red pepper flakes.
  • This salad can be made a day in advance and actually tastes better as it sits.
