Sausage White Bean Soup:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1 small yellow onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1 (15 oz) can diced tomatoes
  • 2 (15 oz) cans white beans (cannellini or great northern), drained and rinsed
  • 2 cups chopped fresh spinach or kale
  • Salt and black pepper to taste
  • Grated Parmesan and fresh parsley for garnish (optional)


Instructions

  1. Heat the olive oil: In a large pot or Dutch oven over medium heat.
  2. Add sausage: Cook until browned, about 5-6 minutes. Remove and set aside.
  3. Sauté vegetables: Add onion, carrots, and celery. Cook until softened.
  4. Add seasonings: Stir in garlic, thyme, oregano, and red pepper flakes.
  5. Combine ingredients: Pour in broth, tomatoes, beans, and cooked sausage. Simmer for 20-25 minutes.
  6. Add greens: Stir in spinach or kale and cook until wilted.
  7. Season and serve: Season with salt and pepper. Top with Parmesan and parsley if desired.
