Sausage White Bean Soup:
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy), casings removed
- 1 small yellow onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups low-sodium chicken broth
- 1 (15 oz) can diced tomatoes
- 2 (15 oz) cans white beans (cannellini or great northern), drained and rinsed
- 2 cups chopped fresh spinach or kale
- Salt and black pepper to taste
- Grated Parmesan and fresh parsley for garnish (optional)
Instructions
- Heat the olive oil: In a large pot or Dutch oven over medium heat.
- Add sausage: Cook until browned, about 5-6 minutes. Remove and set aside.
- Sauté vegetables: Add onion, carrots, and celery. Cook until softened.
- Add seasonings: Stir in garlic, thyme, oregano, and red pepper flakes.
- Combine ingredients: Pour in broth, tomatoes, beans, and cooked sausage. Simmer for 20-25 minutes.
- Add greens: Stir in spinach or kale and cook until wilted.
- Season and serve: Season with salt and pepper. Top with Parmesan and parsley if desired.
