Description

These Santa Fe Chicken Foil Packets are a delicious and easy meal featuring tender chicken, flavorful veggies, and melted cheese, all cooked together in a convenient foil packet. Perfect for a quick weeknight dinner or a fun camping meal!

Chicken:

  • 4 boneless, skinless chicken breasts

Veggie Mixture:

  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 small red onion (sliced)
  • 2 tablespoons olive oil
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • Salt and pepper to taste

Additional:

  • 1 cup shredded Mexican blend cheese
  • Chopped fresh cilantro and lime wedges for garnish

Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F or heat a grill to medium-high. In a large bowl, combine black beans, corn, bell peppers, onion, olive oil, and taco seasoning. Stir to coat evenly.
  2. Assemble Packets: Lay out 4 large sheets of heavy-duty foil. Place one chicken breast in the center of each foil sheet and season with salt and pepper. Spoon the veggie mixture evenly over each piece of chicken. Fold up the sides of the foil to create a sealed packet.
  3. Cook: Place the packets on a baking sheet or grill and cook for 25–30 minutes, or until the chicken reaches 165°F internally.
  4. Finish: Open the foil packets, sprinkle with cheese, and let sit for 2–3 minutes to melt. Garnish with cilantro and a squeeze of lime before serving.
