Description

Indulge in these decadent Red Velvet Cheesecake Bites for a delightful treat that combines the flavors of red velvet cake and creamy cheesecake, all dipped in white chocolate.

Ingredients

Scale

Red Velvet Cheesecake Bites:

  • 1 1/2 cups red velvet cake crumbs (from baked and cooled red velvet cake or cupcakes)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or shortening (optional, for smoother melting)
  • red or pink sprinkles (optional for garnish)

Instructions

  1. In a mixing bowl, combine the red velvet cake crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix until a soft, dough-like consistency forms.
  2. Scoop about 1 tablespoon of the mixture and roll into small balls. Place them on a parchment-lined baking sheet and refrigerate for at least 1 hour to firm up.
  3. In a microwave-safe bowl, melt the white chocolate chips with the coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
  4. Using a fork or dipping tool, dip each chilled cheesecake bite into the melted white chocolate, tapping off the excess. Return to the lined baking sheet and immediately add sprinkles if desired.
  5. Chill the bites in the refrigerator until the chocolate is set, about 15–20 minutes. Store refrigerated until ready to serve.

Notes

  • You can use leftover red velvet cake or bake a simple boxed mix for the crumbs.
  • For a festive look, drizzle with dark chocolate or add edible glitter.
  • Keeps well in the fridge for up to 5 days or frozen for up to a month.
