Red Velvet Cheesecake Bites:
- 1 1/2 cups red velvet cake crumbs (from baked and cooled red velvet cake or cupcakes)
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 1/2 cups white chocolate chips or melting wafers
- 1 tablespoon coconut oil or shortening (optional, for smoother melting)
- red or pink sprinkles (optional for garnish)
Instructions
- In a mixing bowl, combine the red velvet cake crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix until a soft, dough-like consistency forms.
- Scoop about 1 tablespoon of the mixture and roll into small balls. Place them on a parchment-lined baking sheet and refrigerate for at least 1 hour to firm up.
- In a microwave-safe bowl, melt the white chocolate chips with the coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
- Using a fork or dipping tool, dip each chilled cheesecake bite into the melted white chocolate, tapping off the excess. Return to the lined baking sheet and immediately add sprinkles if desired.
- Chill the bites in the refrigerator until the chocolate is set, about 15–20 minutes. Store refrigerated until ready to serve.
