Main Ingredients:
- 1 cup red lentils, rinsed
- 1 tablespoon coconut oil or vegetable oil
- 1 medium onion, finely chopped
Spice Blend:
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt

- 1 can (14 ounces) diced tomatoes
- 3 cups vegetable broth
- 1/2 cup coconut milk

Instructions
- Saute Aromatics: In a large pot, heat coconut oil. Add onion, cook until softened. Stir in garlic and ginger.
- Add Spices: Stir in curry powder, cumin, turmeric, chili powder, and salt.
- Cook Lentils: Pour in tomatoes, broth, lentils. Simmer for 20–25 minutes until creamy.
