Pita Fries

  • 3 medium pitas
  • 2 tablespoon olive oil
  • ½ teaspoon greek seasoning
  • ¼ teaspoon oregano

Tzatziki Sauce

  • 1.5 cups plain greek yogurt
  • 1 cup cucumber, grated using the large holes on a box grater
  • ¼ cup shallot or red onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 2 teaspoon fresh mint, finely chopped & packed
  • 2 teaspoon fresh dill, finely chopped & packed
  • â…› teaspoon kosher salt
  • 1 tablespoon olive oil


Instructions

  1. Prepare Pita Fries: Cut the pitas into ½ inch strips. Toss the pita strips with 2 tablespoons of olive oil, ½ teaspoon greek seasoning, and ¼ teaspoon oregano, ensuring they are evenly coated.
  2. Make Tzatziki Sauce: In a mixing bowl, combine 1.5 cups of plain Greek yogurt, grated cucumber, finely diced shallot or red onion, minced garlic cloves, 1 tablespoon lemon juice, chopped fresh mint and dill, kosher salt, and 1 tablespoon olive oil. Stir until well integrated and let it rest to allow flavors to meld while the pita fries cook. Adjust lemon juice to taste before serving.

  • For extra crispy pita fries, bake in a preheated oven at 400°F (200°C) for about 6 minutes or until golden brown.
  • Grate the cucumber and lightly squeeze out excess moisture to avoid a watery tzatziki.
