  • 2 large eggs

  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) and prepare a baking sheet with parchment paper or grease a loaf pan.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add finely chopped bell pepper, onion, mushrooms (if using), and minced garlic. Cook until softened and fragrant, about 4–5 minutes. Remove from heat and let the mixture cool slightly.
  3. Mix Ingredients: In a large bowl, combine ground beef, the cooled sautéed vegetables, breadcrumbs, eggs, milk, Worcestershire sauce, salt, and black pepper. Mix gently until just combined to avoid tough meatloaf. Fold in the shredded provolone or mozzarella cheese.
  4. Shape the Meatloaf: Form the mixture into a loaf shape on the baking sheet or press it into the prepared loaf pan evenly.
  5. Bake: Place the meatloaf in the oven and bake for 45–50 minutes or until the internal temperature reaches 160°F (71°C).
  6. Add Cheese Topping: In the last 5 minutes of baking, top the loaf with extra provolone slices if desired, allowing them to melt over the top.
