Instructions

  2. Shape and bake tortillas: Drape each tortilla over two bars of an oven-safe rack to form a taco shape. Place a baking sheet underneath to catch any drips. Bake the tortillas for 7–9 minutes until they turn golden brown and crisp. Remove from the oven and let them cool completely to harden.
  3. Make cheesecake filling: In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until the mixture is smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, taking care not to deflate the airiness.
