For the cookies:
- 2 cups granulated sugar
- 1/2 cup whole milk
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick oats
Instructions
- In a medium saucepan, combine the sugar, milk, butter, and salt. Bring to a boil over medium heat, stirring frequently.
- Once it reaches a full boil, let it boil for exactly 1 minute without stirring. Remove from heat and quickly stir in the peanut butter and vanilla extract until smooth.
- Add the oats and mix until fully combined. Drop spoonfuls of the mixture onto wax paper or a parchment-lined baking sheet.
- Let the cookies cool and set at room temperature for about 30 minutes before serving.
Notes
- For a firmer cookie, use old-fashioned oats instead of quick oats.
- You can also add mini chocolate chips or shredded coconut for variety.
- Store in an airtight container at room temperature for up to 5 days.
