  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted

For Serving

  • Vanilla ice cream


Instructions

  1. Preheat Oven and Prepare Butter: Preheat your oven to 350°F (175°C). Pour the melted butter into a 9×13-inch baking dish, ensuring it coats the bottom evenly.
  2. Toss Peaches: In a large bowl, combine the sliced peaches with 1/2 cup sugar, lemon juice, cornstarch, vanilla extract, ground cinnamon, and nutmeg. Toss gently to coat all the fruit thoroughly. Set aside to let flavors meld.
  3. Make Batter: In a separate bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Gradually stir in the milk until you have a smooth batter without lumps.
  4. Assemble Cobbler: Pour the batter evenly over the melted butter in the baking dish. Do not stir it in. Spoon the peach mixture evenly over the batter, again without stirring, creating distinct layers.
  5. Bake: Place the dish in the preheated oven and bake uncovered for 45 to 50 minutes. The cobbler topping should turn golden brown and the peach filling should be bubbly and thickened.
