Instructions

  2. Mix the Parmesan Crust: In a small bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, black pepper, and chopped fresh parsley to create the flavorful crust mixture.
  3. Prepare Olive Oil and Mustard Mixture: In another small bowl, whisk together the olive oil and Dijon mustard to form a smooth brushing mixture.
  4. Coat the Cod Fillets: Pat the cod fillets dry with paper towels to ensure the coating sticks properly. Brush each fillet evenly with the olive oil and mustard mixture, then press the Parmesan breadcrumb mixture onto the top of each fillet, coating them thoroughly.
  5. Bake the Fish: Arrange the coated fillets on the prepared baking sheet. Bake in the preheated oven for 12 to 15 minutes, or until the fish flakes easily when tested with a fork and the crust turns golden brown.
  6. Optional Broil for Crispiness: For an extra crispy finish, broil the fish for the last 1 to 2 minutes of baking, watching closely to avoid burning.
