Ingredients
Scale
Fish
- 4 cod fillets (about 6 oz each)
Parmesan Crust
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs (Panko recommended)
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper, to taste
Other
- 2 tbsp olive oil
- Lemon wedges (for serving)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Make the Parmesan mixture: In a small bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper until well combined.
- Prepare the cod fillets: Brush each cod fillet evenly with olive oil to help the crust stick and add flavor.
- Apply the crust: Press the Parmesan breadcrumb mixture firmly onto the top of each cod fillet so the crust adheres well and covers the surface.
- Bake the cod: Place the crusted cod fillets on the prepared baking sheet and bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown and crispy.
- Serve: Serve the Parmesan crusted cod immediately with fresh lemon wedges for squeezing over the top to add a bright, citrusy finish.
Notes
- Use fresh or thawed cod fillets for best results.
- Panko breadcrumbs create a lighter, crispier crust compared to regular breadcrumbs.
- You can substitute the cod with other white fish like haddock or halibut if desired.
- For extra flavor, add chopped fresh herbs like parsley or thyme to the Parmesan mixture.
- Ensure not to overbake the fish to keep it moist and tender.
