- 1/2 cup grated Parmesan cheese
- 1/2 cup Italian-style breadcrumbs

- 2 eggs, beaten
- 2 tablespoons olive oil

Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a baking sheet or line it with parchment paper.
- Pound the chicken: Pound the chicken breasts to an even thickness using a meat mallet.
- Mix coating: In a shallow bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and black pepper.
- Beat eggs: In a separate bowl, beat the eggs.
- Coat chicken: Dip each chicken breast into the eggs, then coat thoroughly with the Parmesan mixture, pressing the coating onto the chicken.
- Bake: Place the coated chicken on the prepared baking sheet, drizzle with olive oil, and bake for 25–30 minutes until golden brown and cooked through.
- Garnish and serve: Garnish with fresh parsley if desired and serve hot.
Notes
- For extra crispiness, broil the chicken for the last 2–3 minutes of baking.
- This recipe also works well in an air fryer at 375°F for about 18 minutes, flipping halfway through.
