Chicken:
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
Vegetables:
- 1 cup cherry tomatoes (halved)
- 1 cup green beans (trimmed)
- 1/2 red onion (sliced)
- 3 cloves garlic (minced)
Balsamic Glaze:
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
Garnish:
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Prepare the glaze: Whisk together balsamic vinegar, honey, garlic, Italian seasoning, salt, and pepper. Set aside.
- Sear the chicken: Sear seasoned chicken breasts in olive oil until golden. Remove and set aside.
- Sauté vegetables: In the same skillet, sauté green beans, red onion, and cherry tomatoes.
- Combine ingredients: Return chicken to skillet on top of vegetables. Pour balsamic glaze over everything.
- Bake: Transfer skillet to the oven and bake for 15–18 minutes.
- Finish: Spoon balsamic glaze over chicken before serving. Garnish with fresh basil if desired.
Notes
- You can substitute asparagus or zucchini for the green beans.
- For a thicker glaze, simmer the balsamic mixture on the stovetop until slightly reduced before pouring over the chicken.
