Description

This No-Bake Black Forest Berry Cheesecake is a luscious and easy-to-make dessert featuring a chocolate cookie crust, creamy vanilla cheesecake filling, swirl of cherry preserves, and topped with fresh mixed berries and dark chocolate shavings. It requires no baking and is chilled to set, perfect for warm weather or when you want an elegant dessert without oven time.

Ingredients

Scale

Crust

  • 1 1/2 cups chocolate cookie crumbs (such as Oreos, finely crushed)
  • 1/4 cup unsalted butter (melted)

Filling

  • 16 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup cherry preserves or jam

Topping

  • 1 cup mixed fresh berries (such as cherries, blackberries, and raspberries)
  • 1 ounce dark chocolate (shaved or grated)

Instructions

  1. Prepare the crust: In a medium bowl, mix the chocolate cookie crumbs with melted butter until fully combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Refrigerate while preparing the filling.
  2. Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy.
  3. Whip the cream: In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until well combined and light.
  4. Assemble the cheesecake layers: Spread half of the filling evenly over the chilled crust. Spoon half of the cherry preserves over the filling and gently swirl with a knife or toothpick.
  5. Add second layer: Repeat with the remaining cheesecake mixture and top with the remaining cherry preserves, swirling again to create a marbled effect.
  6. Top and chill: Arrange fresh mixed berries on top and sprinkle with dark chocolate shavings. Refrigerate for at least 6 hours or overnight until fully set.
  7. Serve: Carefully release the cheesecake from the springform pan and serve chilled for the best texture and flavor.

Notes

  • For a lighter option, substitute reduced-fat cream cheese and add Greek yogurt in place of some heavy cream.
  • Frozen berries can be used instead of fresh, but be sure to thaw and drain well before arranging on top to avoid excess moisture.
