Instructions

Add finely chopped mushrooms, yellow onion, and minced garlic. Cook for 6-8 minutes until the mixture softens and most moisture evaporates. Stir in dried thyme, salt, and black pepper, cooking for an additional minute. Remove from heat and allow the mixture to cool slightly. Then stir in shredded mozzarella, grated Parmesan, chopped parsley, and Dijon mustard if using.
  2. Stuff the Chicken Breasts: Using a sharp knife, carefully slice a pocket into the side of each chicken breast without cutting all the way through. Stuff each pocket with the mushroom and cheese mixture. Secure with toothpicks if necessary to keep the filling inside.
  3. Sear the Chicken: Heat the remaining 2 tablespoons of olive oil or melted butter in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until they develop a golden brown crust.
