Ingredients
Scale
Berry Mixture
- 4 cups mixed berries (blueberries, strawberries, raspberries, blackberries)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Crisp Topping
- 1 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to ensure it’s hot and ready for baking the crisp.
- Prepare Berry Mixture: In a large bowl, gently toss together the mixed berries with granulated sugar, cornstarch, lemon juice, and vanilla extract until the berries are evenly coated. This helps thicken the filling and enhances the flavor.
- Transfer to Baking Dish: Grease an 8×8-inch baking dish and pour the berry mixture into it, spreading it out evenly.
- Make Crisp Topping: In a separate bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until you achieve a coarse crumbly texture.
- Assemble Crisp: Sprinkle the oat topping evenly over the berries in the baking dish, covering them completely for a nice crunchy layer.
- Bake: Place the crisp in the preheated oven and bake for 35 to 40 minutes, or until the topping is golden brown and the berry filling is bubbling around the edges.
- Cool and Serve: Allow the crisp to cool for 10 minutes before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream.
Notes
- For a creamier touch, serve warm mixed berry crisp with a scoop of vanilla ice cream or a dollop of whipped cream.
- You can use frozen berries; just add an extra tablespoon of cornstarch to help absorb excess liquid and keep the filling from becoming watery.
- Make sure the butter is cold when mixing into the topping to achieve the perfect crumbly texture.
