Graham Cracker Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons melted butter

Cheesecake Filling:

  • 16 ounces cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lime juice
  • 1 tablespoon tequila
  • 1 teaspoon triple sec (or orange juice as a substitute)
  • 1 teaspoon lime zest
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Topping:

  • Whipped cream
  • Extra lime zest

Instructions

  1. Preheat the oven: Preheat the oven to 325°F and line a 12-cup muffin tin with paper liners.
  2. Prepare crust: Mix graham cracker crumbs, sugar, and melted butter. Press into cupcake liners and bake for 5 minutes.
  3. Make filling: Beat cream cheese until smooth. Add sugar, eggs, lime juice, tequila, triple sec, lime zest, vanilla extract, and salt. Mix well.
  4. Bake: Divide batter over crusts and bake for 18–20 minutes until set. Cool, then refrigerate for at least 2 hours.
  5. Serve: Top with whipped cream and lime zest before serving.

Notes

  • For a non-alcoholic version, substitute tequila and triple sec with more lime juice and a splash of orange juice.
