- 1 lb ground beef
- 1 packet taco seasoning mix
Cheese
- 1 ½ cups shredded cheddar cheese
- 1 ½ cups shredded Monterey Jack cheese
- 1 ½ cups shredded mozzarella cheese

- 6 soft taco-sized flour tortillas
- 1 ½ cups pico de gallo
Instructions
- Prepare Beef: Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Drain off any excess grease to keep the mixture from being too oily. Add the taco seasoning mix and the amount of water specified on the seasoning packet, then continue cooking until the liquid is fully absorbed and the beef is flavorful and moist.
- Warm Tortillas: Dampen a paper towel and wrap the flour tortillas in it. Microwave the wrapped tortillas for 30 seconds to soften them, making them easier to roll without tearing.
- Assemble: Place approximately 4 tablespoons of the seasoned ground beef in the center of each softened tortilla. Top the beef evenly with 2 tablespoons each of shredded cheddar, Monterey Jack, and mozzarella cheeses. Add 2 tablespoons of fresh pico de gallo on top of the cheese to add freshness and brightness.
- Heat and Roll: Microwave each assembled tortilla for 30 seconds to gently melt the cheeses and warm the filling. Remove from the microwave and quickly roll the tortillas tightly around the filling. Serve immediately while warm and melty.

- Drain excess grease from the beef to avoid soggy tortillas.
- Softening tortillas in the microwave wrapped in a damp paper towel prevents them from drying out and makes them easier to roll.
