For the Meatloaf:

  • 1 1/2 pounds ground beef (85% lean)
  • 1/2 pound ground pork
  • 1 cup breadcrumbs

For the Mushroom Gravy:

  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon dried thyme
  • Salt and black pepper to taste


Instructions

  1. Prepare Meatloaf Mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, chopped onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently until all ingredients are fully combined, taking care not to overmix to keep the meatloaf tender.
  2. Shape and Bake: Shape the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet. Spread ketchup evenly over the top. Bake in a preheated oven at 375°F (190°C) for 55 to 65 minutes, or until the internal temperature reaches 160°F (71°C). Remove from oven and let rest for 10 minutes before slicing.
  3. Make the Mushroom Gravy: While the meatloaf bakes, melt butter in a skillet over medium heat. Add sliced mushrooms and cook for 5 to 7 minutes until softened and golden. Stir in the flour and cook for 1 minute to form a roux. Gradually whisk in beef broth, Worcestershire sauce, and thyme. Simmer for 5 to 7 minutes, stirring frequently until the gravy thickens. Season with salt and black pepper to taste.
  4. Serve: Slice the rested meatloaf and spoon warm mushroom gravy over the top before serving.
