Instructions

  1. Season the Chicken: Pat the chicken breasts dry and season both sides evenly with salt, pepper, garlic powder, and Italian seasoning.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 4–5 minutes on each side until golden brown and fully cooked through. Remove chicken from the skillet and set aside.
  3. Sauté Aromatics: In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Cook for 1–2 minutes until fragrant, stirring frequently to avoid burning.
  4. Toast the Orzo: Stir in the orzo pasta and toast it lightly for about 1 minute, coating it in the oils and aromatics in the pan.
  5. Add Liquids and Simmer: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer over medium heat and cook uncovered, stirring frequently, for 8–10 minutes until the orzo is tender and the sauce has thickened.
  6. Incorporate Cheese and Spinach: Stir in the grated Parmesan cheese, red pepper flakes if using, and baby spinach. Cook until the spinach is wilted and incorporated into the sauce.
