Instructions

  1. Blanch the Cauliflower: Bring a large pot of water to a boil. Add cauliflower florets and blanch for 2 minutes until slightly tender but still crisp. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the Salad: In a large bowl, combine the blanched cauliflower, cherry tomatoes, olives, celery, red onion, and parsley. Pour the Italian dressing over the vegetables and toss until everything is evenly coated. Season with salt and pepper to taste.
  3. Marinate and Serve: Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to marinate. Toss again before serving and garnish with additional parsley or feta if desired.
