Description

Delicious and tangy lemon truffles made with creamy white chocolate, fresh lemon juice, and zest. These no-bake, bite-sized treats are perfect for any occasion and easy to prepare. Rolled in powdered sugar for a sweet finish, they offer a refreshing citrus twist to classic truffles.

Ingredients

Scale

Truffle Mixture

  • 1 cup white chocolate chips
  • 3 tablespoons heavy cream
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon vanilla extract
  • Pinch of salt

Coating

  • ½ cup powdered sugar for rolling

Instructions

  1. Prepare the Chocolate Mixture: Place the white chocolate chips in a heat-safe bowl. In a small saucepan, heat the heavy cream and softened butter over medium heat until just simmering.
  2. Combine and Melt: Pour the hot cream and butter mixture over the white chocolate chips and let sit for 2 minutes to soften the chocolate. Stir gently until the mixture is smooth and fully melted.
  3. Add Flavorings: Stir in the lemon zest, fresh lemon juice, vanilla extract, and a pinch of salt until the mixture is well combined and smooth.
  4. Chill the Mixture: Cover the bowl and refrigerate the mixture for at least 2 hours, or until it becomes firm enough to scoop and shape.
  5. Form the Truffles: Using a small cookie scoop or spoon, scoop the mixture into approximately 1-inch balls. If the mixture is too soft to handle, place it back in the refrigerator for 15 minutes.
  6. Coat the Truffles: Roll each ball in powdered sugar until evenly coated.
  7. Store and Serve: Place the coated truffles in an airtight container and store them in the refrigerator until ready to serve. Enjoy chilled for the best texture.

Notes

  • For extra flavor and texture, roll the truffles in finely crushed graham crackers or shredded coconut instead of powdered sugar.
  • If the mixture becomes too soft while rolling, refrigerate it again for 15 minutes to firm up before continuing.
  • Store truffles in an airtight container in the refrigerator to maintain freshness and prevent melting.
