- 1 tablespoon avocado oil
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 small yellow onion, thinly sliced
Spices
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste

Instructions
- Sauté Vegetables: In a skillet over medium heat, add avocado oil. Once heated, add the sliced onions and bell peppers. Sauté for 5 to 7 minutes until they become tender and slightly caramelized. Remove from the pan and set aside.
- Cook Beef: In the same skillet, add the shaved beef. Season with garlic powder, onion powder, salt, and pepper. Cook for 4 to 5 minutes, stirring frequently, until the beef is browned and cooked through. Mix the cooked beef with the sautéed vegetables.
- Melt Cheese Slices: Line a large board or tray with parchment paper. In a clean non-stick skillet over low to medium heat, place 4 slices of Monterey Jack cheese with some space between each. Heat until the cheese melts and the edges bubble slightly, about 2 to 3 minutes.
- Assemble Roll Ups: Spoon a few tablespoons of the beef and vegetable mixture into the center of each melted cheese slice. Use a spatula to gently lift and roll each cheese slice around the filling. Let the roll ups cool slightly seam-side down so they hold their shape.
- Serve: Serve the roll ups warm with creamy cheese sauce or your favorite keto dip. They are best enjoyed fresh and hot from the skillet.
