Ingredients
Scale
Chicken Marinade
- 2 chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Rice
- 1 cup rice (white or brown)
- 2 cups water
- 1 tablespoon lime juice (for rice)
- 1/2 teaspoon salt (for rice)
Toppings & Garnishes
- 1 ripe avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, diced (optional)
- 1/4 cup crumbled feta or cotija cheese (optional)
Instructions
- Marinate the chicken: In a small bowl, mix together honey, lime juice, chili powder, garlic powder, salt, and pepper. Rub this marinade all over the chicken breasts and let them marinate for at least 20 minutes, or refrigerate overnight for a deeper flavor infusion.
- Cook the rice: In a medium saucepan, bring 2 cups of water to a boil. Add the rice, lime juice, and salt. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.
- Cook the chicken: Heat olive oil in a grill pan or skillet over medium heat. Cook the chicken breasts for 5-7 minutes on each side until golden brown and the internal temperature reaches 165°F (74°C). Remove from heat and allow the chicken to rest before slicing.
- Prepare the rice: Fluff the cooked rice with a fork and stir in chopped cilantro to enhance flavor and freshness.
- Assemble the stack: On a plate or bowl, layer a base of cilantro rice, followed by sliced honey lime chicken. Top with diced avocado, red onion, and crumbled cheese if desired.
- Finish and serve: Repeat layers for a larger portion if preferred, then garnish with additional cilantro and a squeeze of lime juice on top before serving.
Notes
- Marinating the chicken overnight intensifies the flavors.
- Use brown rice instead of white rice for a nuttier taste and higher fiber content.
- Optional toppings like feta or cotija cheese add a salty, creamy texture but can be omitted for a dairy-free version.
- Adjust chili powder according to your preferred spice level.
- Serve with a side of steamed vegetables or a simple salad for a complete meal.
