Ingredients
Scale
Chicken and Marinade
- 3 boneless, skinless chicken breasts
- 1/4 cup Honey Dijon Chicken Marinade (see note for adjustments)
- 1/4 cup honey
- 3 tbsp Dijon mustard
- 1 tbsp apple cider vinegar (optional, for tang)
- Salt and pepper to taste
Sandwich Assembly
- 6 pretzel buns (or whole grain hamburger buns)
- 6 slices Swiss cheese
- 6 slices cooked bacon
- Lettuce leaves (optional)
- Tomato slices (optional)
Instructions
- Prepare Chicken Cutlets: Place each chicken breast on a cutting board and carefully slice in half lengthwise to create thin cutlets using a sharp chef’s knife with a gentle sawing motion, applying firm pressure to ensure even pieces.
- Marinate Chicken: Transfer the chicken cutlets into a large freezer bag, add the Honey Dijon marinade, seal the bag well, and toss gently to coat the chicken pieces evenly. Refrigerate for about 1 hour to allow flavors to meld.
- Make Honey Dijon Sauce: In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar (if using), and season with salt and pepper. Set aside this sauce for later use both in marinating and as a drizzle.
- Grill Chicken: Preheat a grill or grill pan to medium heat (around 400°F). Remove chicken from marinade, letting excess drip off, and grill each cutlet for about 4 minutes per side until the internal temperature reaches 165°F and the juices run clear.
- Reduce Marinade: Pour remaining marinade into a small saucepan, bring to a boil over medium-high heat, then reduce to a simmer and cook for 5 minutes until slightly thickened. Let cool before using as drizzle.
- Assemble Sandwiches: Slice cooked bacon into thirds. Place a grilled chicken cutlet on the bottom half of each bun, top with a slice of Swiss cheese, broken bacon pieces, and a generous drizzle of the thickened honey Dijon sauce. Add lettuce and tomato slices if desired, then cover with the top bun.
- Serve: Serve the sandwiches immediately while still warm for best flavor and enjoyment.
Notes
- The Honey Dijon Chicken Marinade is made by mixing honey, Dijon mustard, apple cider vinegar, salt, and pepper; you can adjust the amounts to taste or dietary preference.
- If you do not have a grill or grill pan, you can use a stovetop skillet or broil the cutlets in the oven as alternatives.
- Pretzel buns add a wonderful chewy texture and slight saltiness, but whole grain hamburger buns can be used for a lighter option.
- For added crunch and freshness, lettuce and tomato are optional but highly recommended.
- Ensure chicken reaches an internal temperature of 165°F for safe consumption.
- You can prepare the honey Dijon sauce in advance and refrigerate it for up to 3 days.
