Ingredients
Scale
Main Ingredients
- 4 medium potatoes (about 800g), peeled and grated
- 1 medium onion, grated
- 1 large egg
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- Preheat Skillet: Place a large nonstick skillet over medium heat and let it preheat to ensure even cooking.
- Prepare Potatoes and Onion: Grate the potatoes and onion into a large bowl. Use a clean towel or cheesecloth to squeeze out the excess liquid to avoid soggy pancakes.
- Mix Batter: Add the egg, flour, salt, and black pepper into the grated potato and onion mixture. Stir thoroughly until all ingredients are well combined to create a cohesive batter.
- Heat Oil: Pour vegetable oil into the preheated skillet, coating the bottom evenly to prepare for frying.
- Form Draniki: Scoop a heaping tablespoon of the batter and place it into the skillet. Flatten slightly to form pancakes. Repeat with remaining mixture, leaving space between each.
- Fry Pancakes: Cook for 3 to 4 minutes on each side or until the draniki are golden brown and crispy on the outside.
- Drain and Serve: Transfer the cooked draniki to a paper towel-lined plate to absorb excess oil. Optionally sprinkle with fresh dill for added flavor and serve hot with sour cream.
Notes
- Squeezing out excess liquid from the potatoes and onion is key to achieving crispy draniki.
- You can substitute all-purpose flour with gluten-free flour if needed.
- Serve with sour cream or your preferred dipping sauce for enhanced taste.
- Fresh dill adds a traditional herbaceous note but can be omitted if unavailable.
- Use a nonstick skillet to reduce oil absorption and prevent sticking.
