Instructions

  1. Cook the rice: In a large pot or saucepan, combine 4 cups of water and 2 cups of brown rice. Bring to a boil, then lower the heat to a simmer over medium-low to low heat and cover the pot. Cook the rice for about 45 minutes or until it is completely soft and all the water is absorbed.
  2. Prepare the chicken: While the rice is cooking, heat a large skillet over medium-high heat. Add the 2 pounds of lean ground chicken and cook until no longer pink, about 6 to 8 minutes, breaking it apart as it cooks.
  3. Cook the vegetables: Add the chopped spinach, shredded carrot, and shredded zucchini to the skillet with the cooked ground chicken. Continue to cook, stirring occasionally, until the spinach wilts and the vegetables soften, about 3 to 4 minutes.
  4. Cool chicken mixture: Remove the skillet from heat and set the chicken and vegetable mixture aside to cool.
  5. Combine rice and chicken mixture: Once the rice is cooked, stir the cooled chicken and vegetable mixture into the pot with the rice until well combined.
  6. Final cooling: Allow the combined mixture to cool completely before serving it to your dog or storing it for later use.
