These Healthy Taco Shrimp Lettuce Wraps offer a fresh and flavorful twist on traditional tacos. Creamy mashed avocado and a tangy lime-infused sour cream sauce complete these low-carb, refreshing wraps, making them a perfect light lunch or dinner option.

Ingredients

Scale

Shrimp Marinade

  • 500g shrimp
  • 1/3 cup olive oil
  • 1 packet taco seasoning
  • Juice of 1 lime

Salad

  • 200g cherry tomatoes, diced
  • 1/2 small onion, finely chopped
  • 1/2 cup sweet corn
  • 1/4 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp parsley, chopped

Avocado Mash

  • 2 avocados
  • Juice of 1/2 lime
  • Salt to taste

Sour Cream Sauce

  • 170g sour cream or 3/4 cup Greek yogurt
  • Zest and juice of 1/2 lime
  • 1/2 tsp sugar

Assembly

  • 8-9 lettuce leaves
  • Lemon zest, pepper, and cilantro for garnish

Instructions

  1. Marinate the Shrimp: In a bowl, combine the shrimp with 1/3 cup olive oil, taco seasoning, and the juice of one lime. Mix well and let it marinate for 30 minutes to infuse the flavors.
  2. Sauté the Shrimp: Heat a skillet over medium heat and cook the marinated shrimp for about 3-4 minutes on each side, until they turn pink and are cooked through.
  3. Prepare the Salad: In a separate bowl, mix the diced cherry tomatoes, finely chopped onion, sweet corn, garlic powder, 2 tablespoons olive oil, and chopped parsley. Stir well to combine.
  4. Mash the Avocado: In another bowl, mash the avocados with the juice of half a lime and add salt to taste, creating a creamy base for the wrap.
  5. Make the Sour Cream Sauce: Whisk together sour cream (or Greek yogurt), lime zest, lime juice, and sugar in a small bowl until smooth and creamy.
  6. Assemble the Lettuce Wraps: On each lettuce leaf, spread a layer of avocado mash, top with the tomato and corn salad, add cooked shrimp, and drizzle with the sour cream sauce. Garnish with lemon zest, freshly ground pepper, and cilantro before serving.

Notes

  • For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the salad or marinade.
  • Use Greek yogurt instead of sour cream for a lighter, higher-protein alternative.
  • Romaine or butter lettuce works best as sturdy wraps but any crisp lettuce leaf can be used.
  • These wraps are best enjoyed fresh to maintain the crispness of the lettuce and freshness of the ingredients.
  • Leftover ingredients can be stored separately in airtight containers in the refrigerator for up to 2 days.
