For the Shrimp:
- 1 1/2 pounds large shrimp, peeled and deveined (tails on or off)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Vegetables:
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 small red onion, cut into wedges
- 1 zucchini, sliced into thick rounds
- Metal or soaked wooden skewers
- Fresh parsley and lemon wedges for garnish
Instructions
- Marinate the Shrimp: In a large bowl, whisk together olive oil, garlic, lemon juice, lemon zest, paprika, oregano, salt, and pepper. Add the shrimp and toss to coat. Cover and marinate in the refrigerator for 20–30 minutes.
- Prepare the Grill: While the shrimp is marinating, prepare the vegetables and preheat a grill or grill pan over medium-high heat.
- Thread the Skewers: Thread shrimp and vegetables onto skewers, alternating pieces for color and even cooking.
- Grill the Kebabs: Grill the kebabs for 2–3 minutes per side, or until the shrimp are pink and opaque and the vegetables have grill marks and are tender-crisp.
- Serve: Remove from grill and serve immediately, garnished with fresh parsley and lemon wedges.
Notes
- You can use other vegetables like mushrooms or cherry tomatoes.
- For extra flavor, brush leftover marinade on the kebabs while grilling.
- These are delicious over rice, couscous, or a fresh salad.
