Ingredients
Scale
For the Chicken Wings
- 2.5 lbs chicken wings, separated into flats and drumettes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
For the Peperoncini Garlic Butter Sauce
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/4 cup chopped peperoncini (jarred)
- 2 tbsp peperoncini brine (from the jar)
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat the grill: Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent the wings from sticking during cooking.
- Prepare the wings: In a large bowl, toss the chicken wings with olive oil, salt, black pepper, and smoked paprika until they are evenly coated with the seasoning for a flavorful crust.
- Grill the wings: Place the wings on the grill and cook for 20–25 minutes, turning them every 5 minutes to ensure even cooking and crispy, golden brown skin. Cook until the wings reach an internal temperature of 165°F and are fully cooked through.
- Make the garlic butter sauce: While the wings are grilling, melt the unsalted butter in a small saucepan over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn the garlic.
- Add peperoncini and brine: Stir in the chopped peperoncini and their brine. Simmer the mixture for another minute to blend the flavors, then remove the sauce from heat.
- Toss wings in sauce: Transfer the grilled wings into a large bowl and pour the peperoncini garlic butter sauce over them. Toss well to coat all the wings evenly.
- Garnish and serve: Sprinkle freshly chopped parsley over the wings as a garnish if desired. Serve the wings hot for best flavor and texture.
Notes
- Make sure the grill is properly preheated to prevent sticking and to achieve crispy skin.
- Turning the wings regularly helps to cook them evenly and prevent burning.
- You can adjust the amount of peperoncini and brine to your taste depending on how tangy or spicy you prefer the sauce.
- Internal temperature for safely cooked chicken wings is 165°F (74°C).
- Serve with your favorite dipping sauces or a side of fresh veggies for a complete snack or appetizer.
