Scale

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1 cup plain Greek yogurt
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

Additional:

  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F. Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk together the Greek yogurt, eggs, sugar, oil, and vanilla extract until smooth. Add lemon zest if desired.
  3. Combine Dry Ingredients: In a separate bowl, whisk the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Bake: Pour the batter into the prepared pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool and Serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.

Notes

  • For extra flavor, add a glaze made of lemon juice and powdered sugar.
  • This cake also pairs well with almond extract or fresh berries mixed into the batter.
