Description

Golumpki Soup is a comforting Polish-inspired dish that captures the flavors of traditional stuffed cabbage rolls in a hearty, flavorful soup. Made with a mix of ground beef and pork, fresh cabbage, tomatoes, and rice, this soup is perfect for warming up on chilly days and offers a satisfying, nutritious meal.

Meat and Aromatics

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Vegetables and Liquids

  • 1 small head green cabbage, chopped
  • 1 (15-ounce) can tomato sauce
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1/2 cup uncooked white rice

Seasonings

  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar (optional)

Garnish

  • Chopped fresh parsley


Instructions

  1. Brown the Meat: Heat olive oil in a large pot over medium heat. Add ground beef and ground pork and cook until browned. Drain excess fat.
  2. Sauté Aromatics: Add chopped onion and minced garlic to the pot and sauté for 2-3 minutes until softened and fragrant.
  3. Cook Cabbage: Stir in the chopped green cabbage and cook for about 5 minutes, stirring occasionally, until slightly softened.
  4. Add Liquids and Seasonings: Pour in tomato sauce, crushed tomatoes, and beef broth. Add uncooked white rice, Worcestershire sauce, dried thyme, paprika, salt, black pepper, and brown sugar if using. Stir well to combine all ingredients.
  5. Simmer the Soup: Bring the soup to a boil, then reduce heat to low and cover. Let it simmer for 30-40 minutes, stirring occasionally, until the rice is tender and the cabbage is soft.
  6. Adjust and Garnish: Taste the soup and adjust seasoning as needed. Garnish with chopped fresh parsley before serving.

Notes

  • For a lower-carb version, substitute cauliflower rice instead of white rice.
  • This soup freezes well for up to 3 months, making it great for meal prep.
  • You can substitute ground turkey or all beef for the beef/pork mix depending on your preference.
