Served alongside creamy, cheesy mashed potatoes loaded with sour cream, bacon bits, and green onions, this recipe brings together comforting textures and rich flavors in one delicious plate.

Ingredients

Scale

Meat and Seasoning

  • 2 chicken breasts, cubed
  • 2 ribeye steaks, cubed
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Cheesy Loaded Mashed Potatoes

  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup sour cream
  • 1/4 cup milk (more if needed for consistency)
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked bacon bits
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the meat: Preheat your oven to 375°F (190°C). In a large bowl, combine the cubed chicken breasts and ribeye steaks with olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, paprika, salt, and pepper. Toss everything well to evenly coat the meat with the seasoning.
  2. Bake the meat: Spread the seasoned meat cubes evenly on a baking sheet or oven-safe dish. Place them in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the steak pieces are tender. Stir halfway through cooking for even browning.
  3. Cook the potatoes: While the meat bakes, place peeled and cubed russet potatoes into a large pot of salted water. Bring to a boil and cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.
  4. Mash the potatoes: Drain the cooked potatoes and return them to the pot. Add butter, sour cream, and milk, then mash until smooth and creamy. Add more milk if needed to reach your desired consistency.
  5. Add mix-ins to potatoes: Fold in shredded cheddar cheese, cooked bacon bits, and chopped green onions. Season with salt and pepper to taste and stir gently until everything is well combined and the cheese slightly melts.
  6. Serve: Plate the baked garlic Parmesan chicken and steak alongside the cheesy loaded mashed potatoes. Garnish the meat with freshly chopped parsley if desired for an added fresh flavor and a pop of color.

Notes

  • Use ribeye steaks or any tender steak cut for best results.
  • Adjust seasoning and cheese quantities according to taste preference.
  • For extra crispiness, broil the meat for 2-3 minutes at the end of baking.
  • Make sure potatoes are fully cooked before mashing to ensure creamy texture.
  • This recipe can be doubled for larger gatherings.
