Instructions

  1. Prepare and cook the potatoes: Place the halved baby potatoes in a large skillet over medium heat with 1 tablespoon olive oil and 1 tablespoon butter. Season with salt, pepper, thyme, and rosemary. Cook, stirring occasionally, for 12–15 minutes or until the potatoes are golden and tender. Once cooked, remove the potatoes from the skillet and set them aside.
  2. Sear the steak bites: In the same skillet, heat the remaining 1 tablespoon olive oil over medium-high heat. Add the sirloin steak cubes in a single layer (cook in batches if necessary to avoid overcrowding). Sear the steak bites for 2–3 minutes per side, until browned and cooked to your preferred level of doneness.
  3. Add garlic butter to steak: Reduce the heat to medium. Add the remaining 2 tablespoons butter and the minced garlic to the skillet. Stir the steak bites in the garlic butter for about 1 minute, allowing the garlic flavor to infuse and coat the meat.
  4. Combine potatoes and steak: Return the cooked potatoes to the skillet with the steak. Toss everything together gently to combine and reheat the potatoes.
