Description

Salmon:

  • 4 salmon fillets (about 6 oz each)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Creamy Sauce:

  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms (cremini or button)
  • 3 cups baby spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme or Italian seasoning
  • Juice of 1/2 lemon
  • Chopped parsley for garnish (optional)


Instructions

  1. Season the salmon: Season the salmon fillets with salt and pepper on both sides.
  2. Sear the salmon: Heat olive oil in a large skillet over medium-high heat. Sear the salmon skin-side down for 4–5 minutes until golden and crispy. Flip and cook another 3–4 minutes until just cooked through. Transfer to a plate.
  3. Make the sauce: In the same skillet, melt butter over medium heat. Add garlic and cook for 30 seconds. Add mushrooms and sauté until browned. Stir in spinach and cook until wilted. Pour in heavy cream, Parmesan, and thyme. Simmer until slightly thickened. Add lemon juice.
  4. Combine and serve: Return salmon to the pan, spoon sauce over fillets, and simmer gently for 1–2 minutes. Serve garnished with parsley.
