Description

This flourless banana bread is a moist, naturally sweetened loaf that uses ripe bananas and almond butter instead of flour, making it gluten-free and packed with flavor. It’s a perfect healthy treat or breakfast option, enhanced with optional chocolate chips and a decorative banana topping.

Ingredients

Scale

Main Ingredients

  • 3 ripe bananas (plus 1 extra for topping)
  • 3 large eggs
  • 1 cup (250g) almond butter (or peanut butter)
  • 1/4 cup (60ml) honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • 1/2 cup (85g) chocolate chips (optional)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper to prevent sticking.
  2. Mash Bananas: In a large mixing bowl, mash the 3 ripe bananas thoroughly until they are smooth and free of lumps.
  3. Mix Wet Ingredients: Add the eggs, almond butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Whisk everything together until the mixture is well combined and smooth.
  4. Add Dry Ingredients: Stir in the baking soda, cinnamon (if using), and a pinch of salt to the wet mixture, mixing well to combine all ingredients evenly.
  5. Fold in Chocolate Chips: Gently fold in the chocolate chips if you choose to include them, distributing them evenly throughout the batter.
  6. Transfer Batter: Pour the batter into your prepared loaf pan, smoothing the top with a spatula for an even surface.
  7. Decorate with Banana: Slice the extra banana lengthwise and lay the slices on top of the batter for a decorative finish.
  8. Bake: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool: Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • This banana bread is naturally gluten-free but contains eggs and nut butter, so it is not suitable for people with nut or egg allergies.
  • To make it vegan, substitute eggs with flax eggs and use maple syrup instead of honey.
  • Adding chocolate chips is optional but adds a delicious touch of sweetness.
  • For a nuttier flavor, use peanut butter instead of almond butter as an alternative.
  • Ensure bananas are very ripe for the best sweetness and moisture in the bread.
