Scale
Main Ingredients
- 3 ripe bananas (plus 1 extra for topping)
- 3 large eggs
- 1 cup (250g) almond butter (or peanut butter)
- 1/4 cup (60ml) honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp cinnamon (optional)
- Pinch of salt
- 1/2 cup (85g) chocolate chips (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper to prevent sticking.
- Mash Bananas: In a large mixing bowl, mash the 3 ripe bananas thoroughly until they are smooth and free of lumps.
- Mix Wet Ingredients: Add the eggs, almond butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Whisk everything together until the mixture is well combined and smooth.
- Add Dry Ingredients: Stir in the baking soda, cinnamon (if using), and a pinch of salt to the wet mixture, mixing well to combine all ingredients evenly.
- Fold in Chocolate Chips: Gently fold in the chocolate chips if you choose to include them, distributing them evenly throughout the batter.
- Transfer Batter: Pour the batter into your prepared loaf pan, smoothing the top with a spatula for an even surface.
- Decorate with Banana: Slice the extra banana lengthwise and lay the slices on top of the batter for a decorative finish.
- Bake: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- This banana bread is naturally gluten-free but contains eggs and nut butter, so it is not suitable for people with nut or egg allergies.
- To make it vegan, substitute eggs with flax eggs and use maple syrup instead of honey.
- Adding chocolate chips is optional but adds a delicious touch of sweetness.
- For a nuttier flavor, use peanut butter instead of almond butter as an alternative.
- Ensure bananas are very ripe for the best sweetness and moisture in the bread.
