Ingredients
Scale
Egg Mixture
- 1 cup egg whites (from about 6–8 eggs or carton)
- 1/4 cup cottage cheese
Vegetables and Cheese
- 1/4 cup shredded Monterey Jack or mozzarella cheese
- 1/4 cup diced red bell pepper
- 1/4 cup chopped spinach
- 2 tablespoons chopped green onions
Seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For Greasing
- Nonstick cooking spray or oil (for greasing muffin tin)
Instructions
- Preheat and Prepare Tin: Preheat your oven to 350°F (175°C). Lightly grease a 12-cup mini muffin tin or standard muffin tin using nonstick spray or oil to prevent sticking.
- Blend Egg Whites and Cottage Cheese: In a blender, combine the egg whites and cottage cheese. Blend until the mixture is smooth and frothy, ensuring even texture and creaminess.
- Mix the Ingredients: Pour the blended egg white mixture into a mixing bowl. Stir in shredded Monterey Jack or mozzarella cheese, diced red bell pepper, chopped spinach, green onions, salt, and black pepper until well combined.
- Fill Muffin Cups: Evenly distribute the mixture into the prepared muffin cups, filling each about three-quarters full to allow room for rising.
- Bake: Place the muffin tin in the preheated oven and bake for 18 to 22 minutes, or until the egg bites are fully set and lightly golden at the edges.
- Cool and Serve: Remove from the oven and let the bites cool in the tin for 5 minutes. Carefully remove them and serve warm. Store any leftovers in an airtight container in the refrigerator for up to 4 days.

- Use fresh or frozen vegetables as desired, but ensure frozen veggies are thawed and excess moisture drained to avoid sogginess.
- Store leftovers in an airtight container and consume within 4 days to maintain freshness.
