Ingredients
Scale
Dough
- 2 cups almond flour
- 2 tablespoons coconut flour
- 2 teaspoons baking powder
- 1/4 cup Swerve sweetener
- 1/4 teaspoon salt
- 1/4 cup butter, melted
- 2 large eggs
- 1/4 cup unsweetened almond milk
Filling
- 1 tablespoon cinnamon
- 1/4 cup Swerve sweetener
- 2 tablespoons butter
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to avoid sticking.
- Mix Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, Swerve sweetener, and salt. Stir well to evenly distribute all dry ingredients.
- Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, and unsweetened almond milk until smooth. Pour this mixture into the dry ingredients and mix thoroughly until a dough forms.
- Roll Out Dough: Place the dough onto a piece of parchment paper and carefully roll it out into a rectangular shape, preparing it for the filling.
- Prepare and Spread Filling: Melt the 2 tablespoons of butter, then mix in the cinnamon and 1/4 cup of Swerve sweetener. Spread this evenly over the rolled-out dough to ensure every bite is flavorful.
- Roll and Slice: Roll the dough tightly from one edge to the other, forming a log. Using a sharp knife, slice the roll into 8 even cinnamon rolls and arrange them on the prepared baking sheet.
- Bake and Cool: Bake the cinnamon rolls for 15-18 minutes at 350°F (175°C), until they turn golden brown. Remove from oven and allow to cool slightly before serving for the best texture and flavor.
Notes
- Ensure the dough is rolled evenly to allow uniform cooking.
- For sweeter rolls, adjust the amount of Swerve sweetener in the filling according to your taste.
- Do not overbake to keep the rolls soft and moist.
- These cinnamon rolls are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
- Reheat gently in an oven or microwave before serving.
