For the filling:

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 6 ounces semisweet chocolate, melted and slightly cooled
  • 1/2 cup strawberry puree (fresh or thawed frozen strawberries blended smooth)
  • 2 tablespoons sugar

For garnish (optional):

Instructions

  1. Preheat the oven: Preheat oven to 325°F.
  2. Prepare the crust: Mix chocolate cookie crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  3. Make the filling: Beat cream cheese until smooth. Add sugar, eggs, vanilla, and sour cream. Divide the batter, mixing melted chocolate into one half and strawberry puree into the other.
  4. Assemble: Pour chocolate batter into the crust, then spoon strawberry batter on top. Swirl the batters together.
  5. Bake: Bake for 55–65 minutes until just set. Cool in the oven, then chill for at least 4 hours.
  6. Garnish and serve: Top with fresh strawberries, chocolate shavings, or whipped cream if desired.

Notes

  • For a stronger strawberry flavor, concentrate the puree or reduce it slightly on the stovetop.
  • Cheesecake can be made 1–2 days ahead and stored covered in the refrigerator.
